B.C.’s Best Butchers compete to be cut above the rest at TRU

KAMLOOPS — Get ready for a meating of the minds at the second annual BC’s Best Butcher Competition, where the steaks are high, and the cuts are prime. Proudly presented by BCMeats, with Thompson Rivers University (TRU) as a host and major sponsor, this event promises to be a cut above the rest.

This unique competition invites up to 18 skilled butchers from across the province to showcase their talents. Six butchers at a time will skillfully prepare a whole chicken, a pork leg and a chuck roll under the watchful eyes of judges evaluating health and safety, display, technique and meat usage.

Anyone is welcome to come and spectate (entry is by donation); spectators will appreciate the flavours offered by Salt Lick BBQ’s food truck and can sample local beers and ciders, all available for purchase, while supporting their favourite butcher.

“Our campus, known for culinary excellence, is the perfect setting for an event that highlights the incredible skills and dedication of butchers across B.C.,” says Doug Booth, dean of the Faculty of Adventure, Culinary Arts and Tourism.

“It’s a wonderful opportunity not only for our students to learn from seasoned professionals but also for the community to see their skills in action. We look forward to welcoming everyone to the Scratch Café for an unforgettable experience.”

Established in 2009, BCMeats strives to promote, educate and expand the B.C. meat industry. Its membership includes farmers, ranchers, processors and chefs throughout the province. Last year’s inaugural butcher competition in Pitt Meadows exceeded expectations, prompting widespread calls for it to become an annual event.

“This event is a fantastic opportunity to see what our talented butchers can do and celebrate their skills,” says Bonnie Windsor, president of BCMeats.

“Our goal is to promote the art of butchery and inspire more people to join this essential trade. We hope to see community members there, supporting our local talent and enjoying everything the day has to offer.”

The top butcher will receive a custom trophy, $1,000 cash and more, while all participants will receive a swag bag thanks to generous sponsors.
